Tikka Tacos

Charred chicken tikka folded into warm flour tortillas with sharp onion, tomato, and a generous spoon of mint chutney. A weeknight shortcut that tastes like a whole lot more effort than it is.

Ingredients

Tikka chicken

500g chicken breast or thighs, cubed
1 packet Shan Chicken Tikka masala mix
½ cup plain yogurt (120g)
2 tbsp oil

To assemble

6–8 small flour tortillas
1 onion, thinly sliced
2 tomatoes, diced
Mint chutney, as needed
Fresh cilantro, chopped (small handful)
Lemon wedges, for serving

Steps

Tikka chicken

1Mix the 500g cubed chicken with 1 packet of Shan Tikka masala, ½ cup yogurt, and 2 tbsp oil. Really work it into the chicken so every piece is coated.
2Let it marinate for at least 30 minutes. Longer if you have time — a few hours in the fridge makes a big difference.
3Cook the chicken in a hot pan or on the grill until charred in spots and cooked through.

Assemble

4Warm the tortillas.
5Build your tacos — chicken first, then the sliced onion and diced tomatoes, then a generous spoon of mint chutney. Scatter over the chopped cilantro.
6Squeeze some lemon over the top and eat immediately, while it's hot.
